6 large Potatoes
2 Cups Sweet Pickle Relish (with pimento in it)
8 Hard Cooked Eggs
8 tsp. Chopped Onion
Salt & Pepper

Dressing:
16 tsp. Sugar
8 tsp Salt
1 tsp. Black Pepper
8 tsp. Mustard
3 Cups Water
4 Eggs
8 tbsp. Butter
1 Cup Mild Vinegar
8 tbsp.Flour
4 tsp. Celery Seed
Paprika

Directions:

Cook the Dressing first:
Mix the sugar, salt & mustard with the water.
Add the well beaten eggs. Then melt the butter and add to other ingredients.
Add vinegar and celery seed.
Cook in a double boiler. stirring until thick and smooth. Keep this hot and ready to pour over the
potatoes, boiled eggs, etc.

Cook the potatoes and dice into small pieces.
Place the diced potatoes in a large bowl.
Hard boil the eggs and add to the potatoes.
Add the pickle relish and salt and pepper.
Dice the onion in real small pieces and add to the other ingredients.
Pour the hot salad dressing over these ingredients. Combine all together well!
When cool enough, place in the regrigerator over night.

If the Potato Salad is too dry add some mayonnaise. Taste the Salad. Add more salt and sugar if needed. Sprinkle a little paprika over
the top for color. Serve.

I have made this version of Potato Salad for many family gatherings. The secret is putting every thing together while hot and then letting it set overnight for the ingredients to thoroughly
