½ cup margarine
1 cup water
1 cup flour
4 eggs

Bring margarine and water to boil in med. saucepan. Add flour and cook until mixture forms a ball. Remove from heat and let stand two or three minutes. Add eggs, one at a time, beating after each until mixture is smooth. Drop mounds onto greased cookie sheet, the number of mounds from 8 to 16 or more depending on desired size of puffs you want (from large to small).

Bake at 350 F for 35 to 45 minutes. Make a slit in each cream puff to allow steam to escape. Leave in oven at least five minutes (or longer) to cool. When ready to use cut tops off and clean out inside leaving a shell that is ready to fill with your choice of filling.

BASIC CREAM FILLING:
1 lg. pkg. instant vanilla pudding powder
1 ½ cups milk
1 cup whipped cream (reserve ½ cup for topping)

Add pudding powder to milk and whisk until powder is dissolved. Let set. Add ½ cup whipped cream to pudding folding gently to mix.

OPTIONS:
Fruit Filling: Cut up fruit into bite-sized pieces. Fold into cream mixture. Fill puffs with fruit mixture. Place top of puff on top of filled cream puff. Sprinkle icing sugar over puff and plate. Top with whipped cream. Drizzle with chocolate syrup. Garnish with a variety of fruit pieces.

Cream Filling: Use vanilla pudding mixture or pudding and whipped cream mixture, or whipped cream only inside of cream puff. Place top on puff, sprinkle with icing sugar and drizzle with chocolate syrup.

Banana Cream: Use either of above options adding sliced bananas to filling.

Use fruits and nuts of choice to make a filling to you own taste.
