8 ozs. cream cheese
1 tsp. vanilla
2 cups cottage cheese
2 eggs yolks
1/4 cup sugar

Batter:
¼ cup of margarine or butter, softened
1 cup sugar
1 ½ cup sour cream
6 eggs
½ cup orange juice
1 cup flour
2 tsp. baking powder
1 tsp. vanilla

Directions:
Directions:
Place all filling ingredients in a food processor. Combine. Set aside.

Blend batter ingredients together until smooth.
Grease 2 muffin tins. Fill ½ full with batter. Use a small ice-cream scoop and drop filling in batter. This can be made to this point the night before and refrigerated until morning. Bring dish to room temperature. Bake at 350º F for 30 min. or until done. Carefully remove souffles from muffin tins. Use 3 or 4 per serving. Top with Raspberry Sauce or fresh fruit in season, and whipped cream if desired.
