1 c. minced onion
1 tbsp. Italian seasoning
1 1/2 c. fat-free ricotta cheese
2 c. chopped mushrooms
1 c. chopped bell pepper
1 1/2 c. tomato sauce
8 oz egg noodles, cooked and drained
1 oz Parmesan cheese
salt and pepper

Directions:
Spray 9" pan with non-stick spray. Saute onion until brown, add Italian seasoning. Remove 1/2 mixture.
Mix ricotta with 1/2 onion mixture, add salt and pepper to taste. Set aside
To the remaining onion add mushrooms, bell pepper and tomato sauce. Cover and simmer 5 min. Place cooked noodles in 9" pan, top with ricotta mixture then vegetable sauce mix on top. sprinkle with Parmesan cheese.

Bake at 375º for 30 min.
