1 c. pepper jack cheese, grated
1 c. mozzarella, grated
1 c. sharp cheddar, grated
1 box pasta (macaroni or other, about 1lb)
1 c. half & half
2 tbsp. sour cream
1/2 lb. bacon, chopped
3 tbsp. diced Sage
5 tbsp. butter
1 small onion, finely diced
1 c. Cheese-It’s, crushed for topping

Preheat oven to 350º.
Cook pasta according to package. Cook bacon over medium heat till fat has cooked off and bacon is crispy. Remove and set aside. Drain pan, add 3 tbsp. butter and cook onions and sage until soft, about 5 min. When onion is cooked add the half & half to the pan and heat. Add the cheeses and sour cream gradually to the pan over medium-low heat, stirring constantly until the mixture is nice and creamy. Drain pasta and return pasta to pot and add in bacon cheese mixture to the pasta and stir well to mix. Pour this mixture into a greased casserole dish. Melt remaining butter and crushed Cheese-It’s till well moistened. Spread/crumble mixture over pasta and place in the oven until top it crispy and cheese is bubbly.
