1 can black-eyed peas — rinse and drain well
1 can black beans — rinse and drain well
1 can white corn — rinse and drain well
2 medium tomatoes — seeded and diced
1 medium green pepper — diced
4 green onions — chopped
1/2 small red onion — diced
1/4 cup fresh parsley — chopped
1/4 cup fresh cilantro — chopped
1-2 jalapeρos — diced
1 bottle (8 oz.) Italian dressing ( we only use 1/2 a bottle – adjust to taste.)
1 bag Tostitos Scoops

Add dressing, mix it all together. Refrigerate for several hours to let marinate. Serve with Tostitos Scoops.
