Ingredients: 2 pheasants, de-boned and cut into bite size pieces 5 to 8 oz. of shredded cheese (may use cheddar, mozzarella, Swiss or combination of all 3 to 4 T. Parmesan or Romano cheese, grated 1 can cream of mushroom soup 1/2 soup can of water 2-3 c. of stuffing mix or croutons 1/2 stick of butter 1 medium onion 3 to 4 cloves garlic 1 to 1 1/2 lbs. of vegetables, may use broccoli, asparagus, potato or whatever

Directions:De-bone pheasant and cut into bite size pieces, this allows you to clean up the bird really well. Cut bacon into 1” pieces and brown in skillet. Remove the bacon, set aside, retain the bacon grease. Chop onions and garlic, saute in the bacon grease for 3 to 5 minutes. Remove the onions and garlic and set aside, add olive oil if necessary and brown the pheasant pieces, lightly salt the pheasant while browning. Take a 9 X 13 cake pan and grease with butter or spray with Pam. Put down a layer of croutons in the bottom of the pan. Add the pheasant, bacon, onions and garlic to the pan. Sprinkle approximately 1/2 of the shredded cheese on top of the meat mixture. Add vegetables, lightly salt and pepper the vegetables. Pour the cream of mushroom soup and water over the mixture. Add the balance of the shredded cheese and top with croutons. Drizzle 1/2 stick of melted butter over the top of the croutons. Sprinkle 3 to 4 T. of grated Parmesan cheese on top. Cover with aluminum foil and bake at 350 degrees for 60 to 75 minutes. After 45 minutes (or so) remove the foil and let the top of the casserole get slightly brown. Let sit for 10 minutes or more to serve. |

Notes: Total recipe has 4475 calories. Makes 8 servings or 550 calories per serving. May substitute ham or pork sausage for the bacon. May substitute any and all vegetable, we always try to use 2 different ones, maybe a green one and potatoes or squash, but most anything will work.
