1 lb. penne or mastocolli pasta
6 Tbsp. butter
6 Tbsp. flour
3 1/2 cups milk
1/2 tsp. salt
Dash of garlic powder
Dash of onion powder
16 oz. shredded mild cheddar cheese
8 oz. shredded mozzarella cheese
Parmesan cheese

Preheat oven to 350º. Boil pasta. Melt butter in sauce pan. Stir in milk, salt, garlic powder, and onion powder. Continue stirring with whisk until mixture boils. Remove saucepan from heat. Put 2 handfuls of mild cheddar cheese and 1 handful of mozzarella cheese into the sauce. Stir until cheese is thoroughly melted. In a large bowl, combine the cooked pasta and the sauce. Stir until the pasta is coated. Add the rest of the mild cheddar and mozzarella cheese, reserving some for sprinkling on the top. Stir in the cheese until blended, but not melted. Bake in 9X13 inch pan covered with foil for 30 minutes. Remove foil and top with reserved shredded cheese and Parmesan cheese. Put back in oven for 5 minutes until cheese is melted.
