8 Eggs, room temperature
4 Tablespoons Butter
1/2 Cup Parmesan Cheese
1/2 Cup Bread Crumbs
Salt/Pepper to taste

4 Butter Greased Ramekins

Preheat oven to 400ºF.

After generously greasing each ramekin, crack two eggs into each one. Top each ramekin with a tablespoon of butter, salt/pepper, and equally distribute the cheese and bread crumbs amongst them.

Bake on a baking sheet for 6-8 minutes, until yolks are set. Overcooking will result in a quiche. Do not overcook.

Baked eggs make a simple breakfast elegant. This goes extremely well alongside any traditional breakfast elements. The key is not over cook the eggs or they will solidify and turn into stiff mass. The butter on top can fool you into thinking the yolks are undone. It is rare to go over six (6) minutes.
