4 bagels, cut into halves horizontally
1/4 cup plus 1 tbsp butter
7 eggs
1/2 tsp salt
2 cups milk
Chopped cooked ham or bacon, amount to your liking
1/4 tsp paprika
6 oz Monterey Jack cheese, shredded
6 oz Cheddar cheese, shredded
Salsa

Directions:

Grease 9x13 casserole dish with butter. Butter each bagel half, cut into small bite-sized pieces. Whisk eggs, salt, milk, ham/bacon and paprika in medium bowl. Place half the bagel cubes in the dish. Combine cheeses and sprinkle half the cheese mixture over bagels. Repeat layer. Spoon egg mixture into dish, covering bagels completely. Refrigerate, covered, overnight. Bake, uncovered, for 1 hour at 350º. Serve with salsa
