20 oz can crushed pineapple
1/2 cup nuts, chopped
1 cup sugar
2 cups plain flour
2 tsp. vanilla
1 tsp salt
1 tsp soda
1 egg, beaten
1/2 cup sour cream
3 oz. pkg. cream cheese, softened

Icing:
1 tbsp. softened butter or margarine
1 cup powdered sugar
1 tbsp. syrup from pineapple

Directions:

Drain pineapple, reserving syrup. Grease muffin tins; sprinkle each with nuts. Sift Flour with salt and soda. Beat cream cheese, sugar and vanilla together until smooth. Blend in egg. Add flour mixture alternately with sour cream. Fold in drained pineapple.
Spoon into muffin tins. Bake at 350 degrees for about 35 minutes. Let stand in pans 5 minutes.

Icing: combine ingredients. Blend until smooth. Ice muffins.
