2 Tablespoons Fresh Tarragon, minced
2 Tablespoons Dijon Mustard
1 Shallot, minced
1/4 Cup Champagne Vinegar
1 Cup Olive Oil
1 Teaspoon Salt

Directions:
Directions:
Placed the minced herbs, salt, shallots, mustard and vinegar together in a mixing bowl and whisk to combine. Whisking fast, add the oil in thin strands until all of it is added. Pour into a sealable container and allow to refrigerate for an hour before using.

This is my all time favourite dressing and goes well on fresh greens, onions, tomatoes, nearly anything. Made correctly, it should not come out of solution, but if it does, just shake to recombine. Should keep for at least a few weeks in the refrigerator.

Cider Vinegar or White Wine Vinegar may be used instead of Champagne Vinegar.
