1 Pint (16oz or 2 cups) Greek Yoghurt
1 Medium Cucumber, diced finely
2 Cloves Garlic
1 Tablespoon Fresh Dill or 1 Teaspoon Dried Dill
1 Teaspoon Ground Cumin
Salt/Pepper to Taste

1 Small Green Chili, Diced
1 Small Onion, Finely Diced

Mix all ingredients into a bowl. Allow to sit for at least an hour, covered, in the refrigerator.

Tip: For garlic best results, using a mortar and pestle with a dash of salt, add the garlic and pound until a paste forms. The salt causes the garlic to break quite quickly and allows the flavour to permeate better.

If you leave out the cumin, you make the classic tzatziki sauce. This is an Indian recipe. It goes extremely well with the Falafels and Flatbread. For presentation, run oil around the rim and dust with dill or cumin, or place artistically inspired mint buds.
