In a large frying pan, bring the oil to temperature over medium-high heat. In the meantime, using a good, large gauge cheese grater, grate the potatoes after washing them in water. When oil is hot, add the potatoes in clumps around the pan. Add salt/pepper. Cook on each side for 4-6 minutes or until crispy, congealed, and browned. Serve immediately

The key to this is to work somewhat fast. Potatoes have a natural starch that will make them stick together when heated. If you grate the potatoes too early, they will take on a brown to purple colour. This is normal and doesn't effect their taste. It is the starch being exposed to air. Press down firmly on each clump you place around the grease, as it will ensure that they stick together.
