Vodka, Brandy or Everclear

Ginger:
1 Cup Crystallized Ginger
1/2 Cup Sugar

Vanilla:
1/2 Cup Sugar
3 Vanilla Beans

Mint:
1 Cup Fresh Mint
1/2 Cup Sugar
1 Black Peppercorn, Whole

Anisette/Fennel/Licorice
1 Teaspoon Anise Seed, fresh ground
1 Teaspoon Fennel Seed, fresh ground
1/2 Cup Sugar

Choose the type you want, add the ingredients first, then pour alcohol over top until almost level with the lid, then seal. Allow to sit for a month in a cool, dry place before straining and using. Stir now and then. If using fresh ingredients, reduce aging times to two (2) weeks, otherwise flavour may become too intense. Personal choice, though.

After straining, keep in refrigerator to maintain shelf life, but not required if kept sealed properly.

Nearly any herb or spice can be used in this manner, as well as chocolate and coffee, to create a liqueur.

An easy way to store them is by aging them, after straining, in beer bottles and capped. Many liqueurs can simply sit on your rack or shelf, uncooled, for years and never go bad.

Sugar is approximate. If you want it sweeter, add more to taste.
