1/2 c. butter or margarine
1 c. sugar
2 eggs
1 c. mashed bananas (2 or 3)
2 c. flour
1 tsp. soda
1/2 tsp salt
3/4 c. chopped nuts

Directions:
Directions:
Cream butter and sugar together until fluffy. Beat in eggs. Beat in mashed bananas. Mix dry ingredients together and add to the creamed mixture. Add nuts. Place in greased loaf pan, 9x5x3 inches. Bake at 350º F for 1 hour. Let set on a rack for ten minutes and then turn out on rack. After completely cool, store in airtight container. Adding more bananas will make the bread more moist. Adding too many bananas will make the bread soggy.

Banana nut bread has always been one of Tom's favorite foods so when we got married, I tried to make some for him. We had some pretty horrible loaves of bread before I finally found this recipe in the cookbook that came with our new gas range from Kansas Gas Service. This freezes well.
