2 onions ; chopped
1 pound mushrooms ; coarsley chopped
4 Tablespoons oil
40 ounces chopped spinch ; defrosted and squeezed dry
8 carrots ; peeled and grated
8 eggs ; lightly beaten
1 teaspoon salt
4 tablespoons dry chicken soup mix ; kosher kind
1/2 teaspoon black pepper
1 cup matzo meal
ADD ANY VEGETABLES OF YOUR CHOICE

Preheat oven 350, grease 9X13 pan. Saute onions and mushrooms in skillet, set aside. Add spinach, carrots, onions, mushrooms, salt, pepper, soup mix, and matzo mea to beaten eggs. Mix throughly after each addition. Put mixture into pan and bake for 45 minutes. Let cool, cut in squares. This recipe can be made ahead and frozen.l You may add any vegetables of your choice
