Three to four pound of beef short ribs
1 large onion
a clove of garlic (crushed)
one tablespoon white vinegar
two cups of water
one bay leaf

Sauce:
One cup ketchup
1/2 teaspoon garlic powder
one half of the onion chopped
one half of a red bell pepper slivered
lime juice from half a lime
two tablespoons of adobo to season the meat (or salt and pepper to taste)
one quarter cup water

Directions:
Directions:
In a heavy pot brown the ribs slowly using just enough vegetable oil to cover the bottom of the pan. Turn the ribs to get them brown all over. Do not let the pan scorch. Once the ribs have some color add the two cups of water, a clove of garlic, half of the onion (save the other half for the sauce), the bay leaf and the vinegar. Turn down the heat, cover the pot and let it slow cook for about an hour. Use a slotted spoon and put the cooked meat in a baking pan. Mix the sauce ingredients together and pour it over the meat. cover with foil and bake for an hour at 325 degrees. After the hour remove the foil and continue baking for another 20 minutes or until the meat is fork tender.
