1-2 Tbsp olive oil
4-5 carrots sliced
4 celery stalks sliced
1 med onion chopped
2-3 cans chicken broth or can use broth from cooking chicken
2-3 chicken breasts cooked and cubed
2 cans cream of mushroom soup
2-3 cans cream of chicken soup
2 boxes long grain and wild rice mix
1 tsp minced garlic

Directions:
Directions:
In skillet combine olive oil, carrots, celery, onions and garlic and sauté. After chicken has been cooked and cut up add meat back to broth and add vegetables to broth. Add rice mixture and cook for 30 minutes or until rice and veggies are completely tender. Add canned soups and simmer 10 minutes. Add salt and pepper to taste.
