Notes: My Grandfather on my Mother's side came from Iceland; so am guessing this is where the recipe came from. At any rate, this was one of my favorite treats at Christmas time. This is a cake that can be kept for a long time and gets better with age; something like a fruit cake, but better. I can remember my Mother making this cake, wrapping it in "dishcloths" and storing it in a cool spot. For some reason, I was intimidated to make this cake until just a few years ago. Now I have made it twice and the last time I alternated the layers with one of prune filling and one with apricot filling. I like it both ways. It is a nice moist delicious cake just great with coffee, tea or even a great glass of wine!
