3/4 cup shortening
1 1/2 cups sugar
3 eggs
3/8 cup half & half cream
4 1/2 cups flour
3/4 tsp. soda
3/4 tsp.baking powder
3/4 tsp. cardamon
1 tsp. vanilla
Filling:
Steam 2-pounds prunes until stones can be removed. Return to juice, boil until prunes can be mashed (put in a blender or food processor to get smooth.
Add 1-cup sugar, lemon juice or nutmeg.

Cream shortening and sugar, beat in eggs one at a time.
Add cream and dry ingredients.
Divide into seven equal portions.
Grease and line bottom of 7x10" pan.
Flour hands and pat one portion of dough into a thin even layer, covering bottom of prepared pan.
Bake in a 350 oven for 12-15 minutes or till edges are light brown.
Cool layers and spread prune filling between the seven layers and stack. Wrap in wax paper, then foil and store in a cool place for at least 2-weeks before serving. The prune filling will soften the cookie like layers.

My Grandfather on my Mother's side came from Iceland; so am guessing this is where the recipe came from. At any rate, this was one of my favorite treats at Christmas time. This is a cake that can be kept for a long time and gets better with age; something like a fruit cake, but better. I can remember my Mother making this cake, wrapping it in "dishcloths" and storing it in a cool spot. For some reason, I was intimidated to make this cake until just a few years ago. Now I have made it twice and the last time I alternated the layers with one of prune filling and one with apricot filling. I like it both ways. It is a nice moist delicious cake just great with coffee, tea or even a great glass of wine!
