4 (1 and 1/2 lb) Cornish Hens (thawed)
2 tbsp Butter, softened
2 tsp Crushed Rosemary
1 tsp Salt
1 tsp Black Pepper
1 Lemon, thinly sliced

Directions:
Directions:
Preheat oven to 350º. Line roasting pan with heavy duty aluminum foil. Lightly grease rack on roasting pan and place over the foil. Remove giblets, rinse hens, and pat dry. Loosen skin from neck and insert 2 lemon slices between skin and meat of breasts. Place remaining lemon inside hen. Rub with butter and season. Bake for 1 hour or until done.
