Onion
Salt
Creole Seasoning
Butter or Margarine
Jalapeños (optional)

Directions:
Directions:
Preheat oven to 350º. Cut desired amount of potatoes into bite size pieces and place in over safe dish. Chop onion and mix in with potatoes. Add chopped jalapeño if desired. Dot with butter or margarine. Sprinkle with salt and Creole seasoning. Bake covered for about 1 hour. You may want to stir a couple of time to ensure all the potatoes are cooking evenly.

This is a great dish to go with steaks, chicken or burgers! (We call them "Rig" potatoes because a friend of ours made these when he was out working on a rig. He would wrap them in foil and then cook them on the engine of a vehicle!)
