1 lb Frozen/Fresh tortellini, cooked per package directions
Cherry or Grape tomatoes – sliced in halves
Thinly sliced red onion
Fresh spinach leaves, coarsely chopped (not frozen spinach!)
Ranch Dressing (I use Hidden Valley Ranch powder dressing mixed with Hellman’s mayonnaise and milk)

Cook tortellini according to package. Cool completely. In a bowl, mix tortellini with enough dressing to coat pasta. Mix in tomatoes, onion and spinach (I use about ˝-3/4 of a pint of tomatoes, ~1/4-1/2 medium red onion, and enough spinach to add color). Season as desired (salt and pepper) (I don’t usually add any seasonings as the dressing has seasoning in it)

Refrigerate overnight or for a few hours. Check pasta salad before serving – you may want to add a little more dressing to make it creamy.

This recipe came from a co-worker at KC, Elisa Taouil, she got it from a deli while visiting a small town in Connecticut. It is delicious.
