Sage Chicken Recipe

4 boneless chicken fillets
fresh sage
fontina cheese
1 can stewed tomatoes
2 cloves garlic
red pepper flakes
dry white wine
*toothpicks*

Directions:
Directions:
Pound chicken until 1/4 inch thick, place two sage leaves and 1/4 cup graded fontina cheese on top of each chicken cutlet. Roll each chicken up and secure with 3 toothpicks. Meanwhile heat olive oil with 2 garlic cloves and once pipping hot brown the rolled chicken for 4 minutes on each side. Remove chicken and place on plate. Add 1/2 cup white wine to the pan and scrape the bottom, simmer 2 minutes. In blender, blend can on tomatoes, a handful of sage and 2 teaspoons red pepper flakes. Pour into pan and let flavors blend for 5 minutes. Then add chicken back into pan and cook all together for 10 more minutes. Then enjoy!!

Fontina cheese is pretty expensive, I'm sure mozzarella cheese would work too!
