SUPER DELUXE PIZZA Recipe

CRUST:
2 packages dry yeast
1 1/4 cups warm water
1 tsp. honey
1/4 cup olive oil
1 tsp. salt
1 cup whole wheat flour
2 1/2 cups unbleached flour


SAUCE:
3 tbsp olive oil
1 lg. onion, chopped
3 cloves garlic, minced
1 6-oz can tomato paste
1 1-lb 12 oz can tomatoes & juice, chopped
1 tbsp oregano
1 tsp. basil
1 bay leaf
1 tbsp. honey
1 tbsp salt
1/4 tsp. pepper

PIZZA TOPPINGS:
Mozzarella cheese
mushrooms, lightly sautéed
Italian sausage, crumbled or sliced, and browned
Green pepper, sliced into rings
Pepperoni, sliced
Onions, chopped
Other cheeses
Red peppers, dried or fresh
Ground beef, cooked and crumbled

1. FOR CRUST: Dissolve yeast in water, add honey. Combine oil, salt and flours in a large bowl. Add yeast mixture and stir hard to combine all ingredients. Knead until smooth and satiny on a floured board. Place in a greased bowl, cover with a tea towel and let rise in a warm place until doubled in bulk. Punch down dough and knead again lightly. Divide into 2 pieces, roll out dough and fit into 2 14-inch pizza pans or shape on baking sheets.

2. FOR SAUCE: Heat oil in a large pan. Add onions and sauté until limp. Add garlic and cook for 1 minute. Add remaining ingredients. Bring to a boil, lower heat and simmer uncovered for 1 hour, stirring occasionally. Remove bay leaf.

3. FOR PIZZA TOPPINGS:
Cover pizza dough with sauce, and then add any combination of toppings you like. Bake at 500º for 10 to 15 minutes. To test for doneness, lift up a corner of the crust. It should be evenly browned on the bottom.
