3/4 c. Egg substitute, beaten
3/4 tsp. Salt, or less
1 c. Safflower Oil
1 tsp. Soda
2 c. Sugar
3 tsp. Cinnamon
2 c. grated Zucchini
1/2 tsp. Baking Powder
3 tsp. Vanilla
1 c. Raisins
3 c. Flour

Directions:
Directions:
Using low speed of electric mixer, combine egg substitute, oil, sugar, zucchini and vanilla. In separate bowls, combine remaining ingredients, except raisins. Gradually add to zucchini mixture, blend. Stir in raisins. Pour into 2 loaf pans that have been greased. Bake at 350º for 1 hour.
