Peaches and Cream Chicken Recipe

Ingredients: 2 whole chicken breasts - split (4 separated) salt seasoned pepper 1/4 cup butter 1/4 cup minced green onions 1 clove garlic, minced 1 tsp paprika 1 bunch asparagus, parboiled (the original calls for broccoli but I find asparagus is delicious with this recipe) 4 canned peach halves 1 cup sour cream 1/4 cup miracle whip (the original calls for mayonnaise but the Miracle Whip gives it some needed "zing" and is, as Colleen might put it, "nummy!" ;) 1/4 cup Parmesan

Directions:- Season chicken with salt and seasoned pepper. - Melt butter in small skillet, add onions and garlic and saute a few minutes. - Stir in paprika and turn chicken in mixture until well coated. Put in shallow pan. - Cover loosely with foil and bake in preheated oven for 20 minutes, or until chicken is tender.
- Arrange well drained asparagus beside chicken. - Arrange the peach halves on top of chicken breasts. - Mix sour cream and miracle whip and spoon over all. (I also add a bit of the syrup from the canned peaches but that's optional) - Sprinkle with cheese, put in low part of oven or broiler and broil 6 - 8 minutes, or until glazed and richly speckled with brown. |
