1 can green beans, French style
1 sm can peas
1 sm can white shoe peg corn
1 sm jar pimentos
1 sm white onion, cut into thin rings
1 green pepper, cut into thin rings

1/2 c vinegar
1/2 c sugar
1/4 c oil
1/2 t salt
1/2 t pepper

Directions:
Directions:
Drain vegetables. Whip together vinegar, sugar, oil, salt & pepper. Mix in with vegetables. Refrigerate overnight.

Can omit peas and use Mexican style corn, sliced water chestnuts, sliced mushrooms, or diced celery. We made a giant batch of this and served it at Susan and Pete's wedding reception.
