1 cup ricotta
1/2 cup cream
1/2 cup cheddar cheddar cheese (or other)
4 extra large or 6 small eggs
Fresh chopped parsley
Salt & pepper
(sliced ham or prosciutto) optional
1 tsp crushed red pepper
Sliced tomato

Directions:

Warm Oven to 350 degrees
Mix all ingredients well - except sliced tomatoes
Grease glass baking dish
Top with thinly sliced tomatoes
Bake at 350 for 35-40 mins...or until cooked through, and serve with fresh fruit and breads!
