1 tsp sugar
1/2 c. warm water
1 tbsp dry yeast
1 1/4 c. boiling water
1 tbsp sugar
2 tsp salt
1/4 tsp ginger
1 tbsp shortening
4 1/2 c. flour

Directions:
Directions:
Preheat oven to 425º F.
Dissolve yeast in warm water with 1 tsp sugar.
Let stand 10 min.
Combine yeast mixture, 1 tbsp sugar, salt, ginger & shortening. Add boiling water.
Beat in 2 c. flour. Add remaining flour. Mix well. Knead on floured surface. Let rise 1 1/2 hr. Shape into 2 jelly roll type loaves. Slash tops. Place on lined baking sheet.
Place a pan of water on bottom rack in oven. Bake 25 min.
Cover. Let cool.
