2 ¼ c. oat bran cereal
1 tbsp. baking powder
½ c. brown sugar
1 ¼ c. milk
2 egg whites
½ c. crunchy peanut butter

Directions:
Directions:
In a large bowl combine the oat bran cereal and baking powder. In a separate bowl mix together milk, egg whites, brown sugar, and peanut butter. After thoroughly mixed, blend with the oat bran mixture. Allow the batter to sit while the oven preheats to 425 degrees.

Line muffin pans with paper baking cups or use no-stick cooking spray. Fill with batter. Bake 15 to 17 minutes or test with a toothpick.

Store in a plastic bag to retain moisture. Keep the muffins in the refrigerator if they will not be consumed within 3 days as they contain no preservatives.
