Corned Beef 4 lb (flat cut)
Guinness Stout 12 oz
Beef stock
1 lb. carrots cut lg
1 lb. parsnips cut lg
2-3 lb small red potatoes
1-2 onions
2-3 celery lg pieces
1 leek lg pieces
1 head cabbage
sprigs of thyme
bay leaf
few cloves
pkg pickling spice from beef
1 T. grainy mustard

Directions:

Spray pot
Rinse beef well and place in bottom.
Add herbs and pickling spices in sachet.
Add stout and stock to nearly cover beef.
High for 6-8 hours
Layer veg and along sides of beef with onion, celery, carrots, parsnips, potatoes.
High for 1 hour. Remove beef and cont veggies until tender.
Keep veggies warm and toss with 2 T. Vinegar
Oven 350º
Mix 1 c. orange marmalade, 1/4 c. brown sugar, 1/4 c. Dijon.
Place on top of beef and oven for 30-40 min.

Slice beef against grain and serve with veggies.
Serve with stout or ale.
