1/2 c. sugar, 1/2 c. lemon juice, 2 tsp. diced onion, 1 tsp. dijon mustard, 1/2 tsp. salt, 2/3 c. vegetable oil, 1 T. poppy seeds, 1 head of lettuce (romaine works well), 4 oz. swiss or mozzarella cheese, 1 c. cashews, 1/4 c. dried cranberries, 1 apple cubed, 1 pear cubed

In a blender combine sugar, lemon juice, onion, mustard, and salt. Blend well and add oil to mix while blending. Blend in poppy seeds. Dressing will keep for quite a while in a jar in the refrigerator. Just shake well to blend settled ingredients. For salad, toss remaining ingredients & add dressing to taste.
