1 whole chicken
2 chicken bouillon cubes
2 tablespoons olive oil or butter
1 large onion, chopped
4 garlic cloves, chopped
2 large carrots, sliced
6 celery stalks, sliced
1 tablespoon ground cumin
1 1/2 tablespoon chili powder
1 teaspoon salt
1 tablespoon lemon pepper
3 teaspoons red pepper sauce
1/2 cup flour
1 14 -ounce can tomatoes

Directions:
Directions:
Boil chicken in 2 quarts water with bouillon cubes until chicken is tender.
Remove chicken from stock pot and shred chicken. Strain broth and
reserve for soup base.
In a separate skillet, saute onions, garlic, carrots, celery in oil until
translucent. Add cumin, chili powder, salt, pepper, Tabasco, and
flour. Cook in skillet for 3 minutes. Transfer vegetables from skillet to
stockpot. Add tomatoes and bring soup to slow boil for 45 minutes.
Add shredded chicken to soup and heat for 15 minutes.
Serve in individual bowls. Can be topped with following: tortilla chips,sour
cream, grated cheese, avocado slices, cilantro, chopped green onion, and lime slices

Personal Notes:
I use Mexican-style stewed tomatoes with juices and I also do not use
as much cumin, chili powder, and Tabasco as recipe calls for, so season
to taste. You may need to add more tomatoes or broth.
