1/2 cup finely chopped onion
2 Tbsp butter or margarine
1/4 cup all purpose flour
2 cups milk
1 13 3/4-ounce can chicken broth (not condensed)
1/2 cup finely diced carrot
1/2 cup finely diced celery
Dash each of salt and paprika
One cup cubed sharp process American Cheese (the block deli or commodity cheese is best)

Optional: One bottle or can of beer!

Cook onion in butter till tender. Blend in flour; add remaining ingredients except cheese. Cook and stir till thick and bubbly. Reduce heat; add cheese; stir to melt. Simmer 15 minutes.

If you add the beer, do it at the end and simmer a few more minutes.

Also great with diced chicken or small shrimp. Just season lightly and saute with the butter and onion.
