2 regular sized cans black beaned – rinsed
1 can whole kernel corn – drained
½ cup of store bought chopped onion mix
juice of one lime
1 or 2 diced tomatoes (Roma preferred)
½ jar salsa – I use medium spiciness
½ packet dry taco seasoning mix
½ packet dry Ranch dressing mix
Black and cayenne pepper to taste
One firm avocado, chopped

Mix together well. Best if prepared the day before. Refrigerate. Stir occasionally.

Next day, stir in 1 or 2 diced fresh, firm avocados. Serve with your favorite sturdy chip. Also great inside of burritos and wrap sandwiches, as a side dish or sprinkled on a salad.
