Lg. chicken breast or, thin sliced boneless, skinless chicken breast
1 cup fresh cilantro, chopped
¾ cup tequila
½ cup fresh lime juice
2 tbsp. firmly packed brown sugar
1 fresh jalapeno chili, stemmed, seeded, and minced (Optional)
1 ½ tbsp minced garlic
1 tsp. kosher salt
½ tsp. freshly ground black pepper
3 tsp. grated lime zest

If using whole chicken breast cut each breast in half crosswise, using a sharp, heavy knife.
In a large glass bowl, combine cilantro, tequila, lime juice, brown sugar, chile, garlic, salt and pepper. Add chicken and mix to coat with marinade. Cover and let stand at room temperature for 30 minutes. (Do not marinate longer, because the acid in the marinade will being to “cook” the chicken.)
Prepare a gas or charcoal grill for direct, medium=high heat.
While grill heats, remove chicken from marinade, transfer to a platter, and pour marinade into small bowl. Rub meat with ½ tsp. lime zest.

Place chicken on oiled cooking grate and brush with marinade. Each time you turn the chicken brush it with marinade, cooking until done.
