2 cups water
1 cup uncooked long-grain rice
4 cups Vidalia onions (3 medium or 1 large), peeled and chopped
3/4 stick butter
2 tbsp. parsley, chopped
1/4 salt (I add a little pepper too)
1 cup shredded Swiss cheese
1 cup whipping cream, do not whip

Directions:
Directions:
Bring water to boil in medium saucepan. Add rice. Cover and reduce heat to simmer. Cook for 10 minutes, then drain and set aside. Melt butter in large Dutch oven over medium heat. Add onion and cook for 15 minutes, stirring frequently. Remove from heat. Stir in rice and remaining ingredients. Spoon into 13x9 baking dish. Sprinkle with paprika. Cover and bake at 350° for 30 minutes.
