4 cups cooked, cubed chicken
2 tablespoons butter
1 cup chopped onions
1 1/2 cups chopped carrots
1/2 cup chopped celery
2/3 cups sliced fresh mushrooms
2 tablespoons flour
6 cups chicken stock
1 teaspoon dried basil
1 teaspoon garlic salt
1 teaspoon dried parsley
1 package frozen mixed veggies, thawed
3 cups cooked, diced red potatoes
Salt and pepper

Directions:
Directions:
Saute' onions, carrots, and celery in a large stockpot over medium heat until soft. Add mushrooms and continue sautéing an additional 3 minutes. Sprinkle flour over mixture and stir, cooking an additional 2 minutes. Add chicken, basil, garlic salt, parsley, mixed veggies and potatoes. Add stock and stir until heated through. Season to taste with salt and pepper. Serve with Irish soda bread (recipe in this book)
