Ingredients:  
3 medium yellow squash, sliced, boiled till tender and mashed while in the colander
salt & pepper, to taste
1 egg, beaten
1 tbsp. onion, finely chopped
1/2 stick of butter, sliced
2 tbsp. sugar (or 2 1/2 pkg of Splenda)
2 slices of white bread (day old or frozen is fine), chopped

In large bowl, add drained squash and remaining ingredients. Mix well. Spray Pam in 8x8 casserole. Add squash mixture and sprinkle with paprika. Bake uncovered at 350° for 25 minutes or until hot.

This recipe came from a restaurant called the Black-eyed Pea. It is hard to find a squash recipe without cheese in it. This is a family favorite.
