1 Tsp Olive Oil
1 Onion, finely chopped
1/2 Green Bell Pepper, seeded & chopped
1 Minced Garlic Clove
2 Tsp Cajun Seasoning
1 Tsp Chili Powder
1/2 Tsp Ground Cumin
1/3 C Long Grain Rice
1 14 1/2 oz Can Stewed Tomatoes
1/3 C Water
1 C Cubed Cooked Chicken

Heat the oil in a medium non stick skillet over medium to high heat. Add the onion, bell pepper, and garlic and cook, stirring frequently until softened about 8 minutes. Add the Cajun seasoning, chili powder, and cumin. Cook one minute. Add the rice and cook, stirring constantly until the grains are coated - about one minute. Add the tomatoes and water; bring to a boil. Reduce the heat and simmer, covered 15 minutes. Add the chicken, cook covered, until the rice is tender and chicken is thoroughly heated.
