2 lbs. ground beef
29 oz. can tomato sauce
29 oz. can kidney beans (with liquid)
29 oz. can pinto beans (with liquid)
1 c. diced onion (about 1 medium)
1/2 c. diced green chiles (I use 2 cans chopped
green chiles)
1/4 c. diced celery (1 stalk)
3 medium tomatoes, chopped
2 tsp. cumin
3 T. chili powder
1 1/2 tsp. black pepper
2 tsp. salt
2 c. water

Directions:
Directions:
Brown ground beef, crumbling into small pieces, and drain off fat. Mix all together and simmer over low heat, stirring frequently, for 2 to 3 hours. Or throw all in the crockpot and let cook all day.

For spicier chili, add 1/2 tsp. additional black pepper, or, even spicier, 1 tsp. additional black pepper plus 1 T. cayenne pepper. To really spice it up, add 5 to 6 slices jalapeņo peppers to the above.
Leftovers can be frozen for several months.

This is a favorite in the winter. We serve it with oyster crackers, more onions, shredded cheese, sour cream, etc.
