3 c. cooked wild rice, drained well & cooled
1. c. cashews
1/3 c. chopped onion
8 oz sliced water chestnuts
1 c. halved green grapes
3 c. cooked cubed chicken
Dressing:
2/3 c. mayonnaise (not Miracle Whip)
2 tsp. lemon juice
1/4 tsp. tarragon
1/2 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Layer ingredients in a large bowl. Just before serving, mix in dressing. My little sister, Mary taught me to cook the entire package of wild rice and put it in the freezer. Then it is ready to go whenever you want to make soup, casseroles, or salads.

This is one of my two "go to" salads for luncheons or summer outings. Everyone loves it and I rarely have left overs, even with a small group. What they don't eat they take home with them.
