2-3 Chicken Breast
2 C. Sour Cream
4 C. Shredded Cheddar Cheese, divided
2 1/4 oz. Sliced Ripe Olives, drained
1 bunch green onions, sliced thinly
8 Flour Tortillas
1 can (16 oz) enchilada sauce

Directions:
Directions:
Cook chicken and cut into 1" strips. In large bowl, combine 3 cups shredded cheddar cheese, chicken strips & sour cream. Set aside 2 tbls olives and onions. Add remaining olives and onions to cheese mixture; mix well. Spoon 1/2 C. down the center of each tortilla. Roll up and place seam side down in greased 9x13 baking dish. Pour enchilada sauce over the top. Sprinkle with remaining cheese. Cover and bake at 325º for 23-30 minutes or until heated through & cheese is melted. Sprinkle with reserved olives and onions.
