3 lbs. yellow summer squash
1/2 cup chopped onions
1/2 cup cracker meal or bread crumbs, reserved
1/2 tsp. pepper
1 tsp. salt
2 eggs
1 stick butter, reserving 1/2 stick
1 tbsp. sugar

Directions:
Directions:
Wash and cut up squash. Boil until tender, drain thoroughly, then mash. Add all ingredients except 1/2 of the butter to squash. Melt remaining butter. Pour mixture into casserole. Spread remaining melted butter over, then top with cracker meal or bread crumbs. Bake at 375º for one hour.
