1 turkey breast cooked and cubed, or meat from 1 deli chicken cubed, or meat from one left over roasted turkey, cubed.
1 cantaloupe, cubed
1 honeydew, cubed
1 or part of 1 watermelon, cubed
Couple scoops of mayonnaise
few drops of anise flavoring

Directions:
Directions:
Place cubed meat in a large bowl, add melon balls. Dress with mayonnaise, add a few drops of anise flavoring. Refrigerate and serve the same day. It doesn't keep real well because of the juices so eat it all up.

This is one of my summer "go to" luncheon salads. It sounds horrible, but everyone loves it, so make lots. I learned how to make this salad in the summer of 1968 when I worked as a salad sous-chef in a big resort.
