2 tbsp butter
2 tbsp olive oil
8 oz boned skinned chicken breast cut into chunks
1/4 cup chopped scallions
1 tsp minced garlic
1/2 cup heavy cream
8 oz fresh mushrooms sliced
1 can (16 oz) whole tomatoes, chopped
1 cup frozen green peas
1 tsp salt
1/4 tsp pepper
1/4 cup chopped fresh basil ( or 2 tbsp dried)
8 oz fettuccine cooked
1/4 cup Parmesan cheese

Cook pasta. Heat butter and ail in a large heavy skillet over medium heat. Add chicken, scallions and garlic. Cook and stir occasionally until chicken begins to brown ( about 7 minutes). Stir in cream, mushrooms, tomatoes, peas, salt and pepper. Heat to boil over high heat. Reduce heat to medium and simmer until sauce is slightly thickened and chicken is cooked through. Stir in basil and remove from heat. Serve over pasta and sprinkle with Parmesan cheese.
