1 lb ground turkey
1 sm onion
3 minced garlic cloves
1 540 ml can Aylmer Accents spicy red pepper stewed tomatoes
1 oz can tomato sauce
1 tbsp basil leaves (dried), divided
1 tsp each oregano and salt
2 tbsp fresh chopped parsley
1 cup water
2 1/2 cups of broken lasagna noodles (brown rice)
1 cup fat free cottage cheese
1/4 cup grated Parmesan cheese
1 egg
Mozzarella fat free cheese (shredded)

Directions:
Place lasagna noodles in big pot of boiling water & boil until "al dente", drain & rinse thoroughly, especially if using brown rice noodles as they are very starchy. Meanwhile in a large skillet, heat about 2 tbsp olive oil, then brown ground turkey with onions & garlic. Drain if necessary. Add tomatoes, water, tomato sauce, parsley, 2 tsp of the basil, oregano & salt. Stir in pasta and bring to a boil, stirring occasionally. Reduce heat, cover and simmer for 10 mins. Combine cottage & Parmesan cheeses, mix in the egg & sprinkle in remaining basil & pepper to taste. Drop cheese mixture by rounded tbsp onto pasta mixture. Cover & cook for 5 minutes more. Sprinkle with shredded mozzarella and serve.

This recipe is quick & flavorful, but still very lean & healthy. I prefer using brown rice noodles as they make the meal quite satisfying without the feeling of over eating.
