4 Eggs ,separated
1/3 cup fresh lemon juice
1 tsp. lemon zest
1 T. soft butter
1 1/2 cups sugar
1/2 cup flour
1/2 tsp. salt
1 1/2 cups milk
Directions:
Directions:
Beat together egg yolks ,lemon juice, lemon rind, and butter until thick and lemon colored. Combine sugar, flour , and salt,; add alternately with milk to the yolk mixture, beating well after each addition.....

Beat egg whites until stiff. Fold egg whites into first mixture OR gently blend egg whites into batter using low speed of electric mixer. ( Do not overmix) Pour into 8 inch buttered square baking dish.

Place a pan of hot wate in the overn, and set the baking dish into the pan. Bake at 350º for 45 min or till set and browned.
