Ingredients: 1 # prunes 1 qt. cold water 1 c. sugar 1 1/3 c. boiling water 1/3 c. corn starch 1 tsp.lemon juice 1/8 tsp cinnamon 1 tsp. butter

Directions: |
Directions:Soak washed prunes in cold water several hours. Cook in same water till tender. Then remove the pits and cut prunes in small pieces. Add sugar to 1 1/3 cups boiling water--.let simmer then add corn starch and cinnamon (mixed with a little cold water so it will be like a smooth paste)--cook a few min. and add butter and lemon juice. Serve with cream |

Notes: Grandma Caroline often made this---wonder if Grandpa Nels needed "relief" ? I really can not imagine serving this for dessert but with the butter and cream--how could it be bad??? I make a variation of this and serve it on oatmeal as we all know oatmeal needs some help!! When I was in Norway I saw herring all the time (never thought I would get tired of it) and the prunes were on the breakfast buffet---but not as pudding. Sometimes Grandma Caroline mixed the prune pudding with tapoica. Grandma Caroline was a pretty good cook but my mom was better because she put butter and cream on everything--chicken--creamed vegetables cinnamon rolls etc.--wonder why I like butter and cream so much???
